Laurie Anne Land: June 2024

It's been a wild few weeks over here: Oscar went to camp (and crushed it!!), we went to London where I turned 38, we drove our camper van to Alabama to spend 2 weeks with our families (Oscar learned to swim at the lake!) and now we are in Brooklyn, NY! 😅 We are going to be here for the month of June but haven't decided where we are headed after that.. everything is a bit up in the air at the moment but I'll keep ya posted! 😉

What I'm Loving

  • I’ve been looking for cute and comfy slip on sandals for what feels like YEARS (Birkenstocks just don’t do it for me) and I am so happy to announce, I found some !! I love them so much. I am usually a size 6/6.5 - 7 and kept the 7!
  • I got these locks for our bike helmets but these would be the perfect stocking stuffer ha! Christmas in June? Not a thing?
  • We have been tracking our macros and it has given us so much insight into how little protein we were eating. It's been very interesting to track. I have been learning from Mindin’ My Macros .
  • If you are a pup parent and need a good babysitter… let me introduce you to Oscar’s favorite snack that will keep him busy and out of trouble for a bit! It's been a life saver for Oscar with all the traveling and change!
  • I’ve had an Apple Watch watch for years but JUST now figured out how to use the activity rings. Ok, I never really tried before but now I am trying to get in more daily movement and am happy to report I now know how to use the activity rings.
  • Such a small but life changing kitchen item if you like tacos. We even brought them with us to NYC 😂
  • I got a couple of these frames to try and I love them so much.
  • This was an impulse buy after seeing someone's before and afters. I haven't been using it consistently at all but can already tell a difference!
  • Weeds got ya down? Taylor got this tool and really likes it lol

Something Yummy!


My mother in law made these coconut macaroons for us and they were so good and easy to make! I got the recipe to share with you. Enjoy!!

COCONUT MACAROONS


- 1 14 oz bag sweetened, flaked coconut

- 1 14oz can sweetened condensed milk

- 1 tsp vanilla extract

- 2 egg whites

- 1/2 tsp salt


Preheat oven to 325 degrees F

Combine *almost* the entire can of sweetened condensed milk (leave about 2 tablespoons in the can) with coconut. Stir to combine. Add in vanilla and stir to combine. Set aside.

Next, in a separate bowl combine egg whites and salt and beat until soft peaks form.

Gently fold egg whites into coconut mixture.

Then scoop or spoon mixture, about two tablespoons, onto baking sheets that are covered with parchment paper or silicone baking mats.

Finally, bake for approximately 25 minutes or until starting to turn golden brown. Remove from oven, then immediately remove cookies from baking sheet and transfer to a wire rack to cool.
